FOR THE SPONGE CAKE LAYER:
150g (3/4 cup) sugar
pinch of salt
5g (1 tsp) vanilla sugar
200ml (4/5 cup) milk
80ml (1/2 cup) vegetable oil
30g (1/4 cup) cocoa powder
190g (1 1/4 cup) flour
8g (1 tsp) baking powder
200ml (4/5 cup) hot milk (to pour over sponge cake)
FOR THE CREAM LAYER:
300ml (1 cup + 3 tbsp) heavy cream
250g (1 1/6 cups) Mascarpone
FOR THE CHOCOLATE LAYER:
200g dark chocolate
50g (3 tbsp) chopped nuts
Preheat the oven to 180°C/360°F.
In a bowl whisk eggs with sugar, a pinch of salt, and vanilla sugar until smooth. Whisk in milk and oil.
Sieve cocoa powder into the mixture and stir until homogeneous. Stir in flour and baking powder.
Pour the mixture into a greased baking dish and bake for 20-25 min.
Poke baked sponge cake with a fork and pour hot milk over the top of the cake. Set aside.
In a bowl whip heavy cream until starting to be thick, then add mascarpone and continue to whip until thick and smooth.
Spread the cream on top of the sponge cake and chill in the fridge for at least 1 hour.
Melt dark chocolate and stir in chopped nuts. Pour over the top of the chilled cake.
Wait until set and slice into squares.
II. CHOCOLATE SQUARES
Chocolate squares: creamy and rich of whipped cream, they are super delicious!
These squares are addictive! With just a few ingredients, it’s impossible to not try them:
150 gr sugar
1 cup of water
200 gr flour
2 tbsp cocoa
1 tbsp baking powder
300 ml cream
Milk as you need
200 gr chocolate
200 ml cream
Whisk the eggs with the sugar, then add the water. Sift flour, cocoa, baking powder and add to the rest. Pour the mixture into a rectangular pan and bake at 356°F (180°) for 30 minutes.
Then whip the cream and spread it over, let it cool.
Melt the chocolate in the cream and pour over the cake, let it cool and serve this delight.
