Carrot cake cupcakes
Ingredients


1 1/2 cups flour
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup vegetable oil
1 cup buttermilk
1 cup grated carrots
2 eggs
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
2 tsp cinnamon powder
2 tsp nutmeg
1 tsp ginger powder
1/4 cup walnuts (optional)
1/4 cup raisins (optional)

I used homemade buttermilk . Add 2 tablespoons of freshly squeezed lemon juice to the milk and let it sit for 5 minutes.
